  • Preheat oven to 450°F (230°C). Place a 12-inch cast iron skillet in the oven as it’s preheating. Remove the salmon from the refrigerator to let it come closer to room temperature. 
  • In a small bowl, combine the honey, minced chives, fresh minced parsley, lemon zest, lemon juice, and a pinch of cayenne pepper. Whisk these ingredients together until well incorporated, then set the sauce aside.
  • Using a paper towel, thoroughly dab both sides of the salmon fillets to remove any excess moisture. Season both sides of the salmon generously with salt and black pepper. 
  • When the oven reaches 450°F (230°C), turn off the oven. Carefully, using hot pads or oven mitts, remove the preheated skillet from the oven and place it on your stovetop over medium-high heat.
