  • Gently flatten each dough portion. Place a heaping tablespoon of shredded mozzarella (or fresh cubed mozzarella) in the center, then top with a small handful of quartered pepperonis. Gather the dough ends up and around the toppings, pinching firmly to seal and form a tight ball. Repeat for all dough balls.
  • Place the filled rolls evenly on a greased jelly roll baking sheet.
  • Cover the rolls with plastic wrap and let them rise for 1 hour, or until they are visibly puffy and almost doubled in size. While rising, preheat oven to 400°F and prepare the butter topping.

  • In a medium bowl, combine the melted butter, oregano, basil, garlic powder, and salt. Stir well. Brush half of this mixture over the risen dough balls.
