To Freeze: To prepare for freezing, make the sloppy joe mixture as directed, then allow it to cool completely to room temperature. Portion the cooled mixture into a freezer-safe container or heavy-duty freezer bags. It can be frozen for up to 4 months. When you’re ready to use it, remove it from the freezer and let it thaw overnight in the fridge. Reheat thoroughly in a skillet or microwave before serving. If the mixture appears a little dry upon thawing, add a splash of water or extra ketchup to restore moisture and flavor.

Adding More Vegetables: For extra fiber and flavor, you can also add finely diced celery (1-2 stalks) to the mixture. Simply add it to the skillet at the same time as the bell pepper and onion.
