Essential Ingredient Notes

This recipe shines with its simplicity, relying on just a few key ingredients. Quality matters here, so let’s dive into some specifics to ensure your Honey Butter Skillet Corn turns out perfectly every time:

A bronze baking sheet with glass bowls filled with frozen corn, honey, butter, cream cheese, and salt and pepper.
  • Butter: You can use either unsalted or salted butter for this recipe. If you opt for salted butter, simply be mindful of this when adding additional salt at the end. The butter provides a rich base for our creamy sauce and helps the honey melt beautifully. For an even deeper flavor, you could lightly brown the butter before adding the honey, but for simplicity, just melting it works perfectly.
  • Honey: I recommend using a good quality, pure liquid honey. Clover, wildflower, or even a local varietal will work wonderfully, each lending its own subtle nuances to the dish. If you only have creamed honey on hand, it will also work just fine; it might just take a tiny bit longer to fully melt into the butter and corn.
  • Corn: The beauty of this recipe is its adaptability. I typically use a 16 oz bag of high-quality frozen corn kernels, which requires no thawing beforehand. If you prefer, well-drained canned corn (ensure all excess liquid is removed to prevent a watery sauce) or fresh corn cut right off the cob can also be used. For fresh corn, aim for about 2-3 ears to get approximately 16 oz of kernels.
  • Cream Cheese: This is a crucial ingredient for that signature creamy texture. It is absolutely essential to use softened cream cheese. If the cream cheese is cold or straight from the fridge, it will be much harder to incorporate smoothly and may leave small lumps in your sauce. Cutting the softened cream cheese into small cubes before adding it to the skillet will further help it melt and combine seamlessly into the warm corn mixture. Full-fat cream cheese will yield the richest and creamiest results.
  • Salt and Pepper: These are added to taste at the very end to perfectly balance the sweet and savory notes of the dish.

Step-by-Step Instructions

Get ready to create this incredible side dish with minimal effort. Follow these simple steps for perfectly creamy Honey Butter Skillet Corn:

  1. Melt the Butter & Combine with Honey: Begin by adding the butter to a large skillet set over medium heat. Once the butter has completely melted and is glistening, pour in the honey. Stir these two ingredients together until they are well combined and bubbling gently.

  1. Add Corn and Cook: Stir in the frozen corn (no need to thaw!). Continue to cook for 5-8 minutes, stirring frequently, until the corn is heated through and slightly tender. If using fresh or canned corn, cook for a shorter period, just until heated and coated in the honey butter.
  2. Incorporate Cream Cheese: Reduce the heat slightly if needed. Add the softened cream cheese, cut into small cubes, to the skillet. Stir continuously until the cream cheese has completely melted and forms a smooth, creamy sauce that evenly coats all the corn kernels. Ensure there are no lumps remaining.
  3. Season and Serve: Taste the honey butter skillet corn and season generously with salt and pepper according to your preference. The salt helps to balance the sweetness of the honey and corn. Serve this delightful side dish immediately while it’s warm and wonderfully creamy.

Recipe Tips for Success

To ensure your Honey Butter Skillet Corn is absolutely perfect every time, keep these helpful tips in mind:

  • Drain Canned Corn Thoroughly: If you’re opting for canned corn, it is absolutely crucial to drain it completely before adding it to the skillet. Excess liquid from the can will dilute your delicious honey butter cream cheese sauce, making it less creamy and flavorful. Patting it dry with a paper towel can also help.
  • Softened Cream Cheese is Key: I cannot stress this enough – your cream cheese needs to be quite soft, ideally at room temperature, for it to melt smoothly and evenly into the corn mixture. Cold cream cheese will likely create lumps and a less homogenous sauce. Cutting the softened cream cheese into small cubes (about 1/2 inch) will also significantly aid in its quick and even melting.
  • Consider Your Skillet: A good quality non-stick skillet or a well-seasoned cast-iron skillet will work best for this recipe, ensuring even heat distribution and preventing sticking.
  • Adjust Sweetness to Taste: Corn has natural sweetness, and honey adds more. If you prefer a sweeter side dish, you can add an extra drizzle of honey or a pinch of sugar with the butter. For a less sweet profile, slightly reduce the amount of honey.
  • Add a Touch of Spice (Optional): For those who enjoy a little kick, a tiny pinch of red pepper flakes added with the corn can introduce a delightful warmth that complements the sweetness beautifully.
  • Garnish for Freshness: While delicious on its own, a sprinkle of fresh chopped parsley or chives before serving can add a lovely pop of color and a fresh herbaceous note.
  • Healthier Option Considerations: You can certainly use reduced-fat or fat-free cream cheese for a lighter version. However, please note that the sauce will likely be less creamy and may have a slightly altered texture compared to using full-fat cream cheese. The rich flavor profile might also be somewhat affected due to the reduction of fat.

Make Ahead, Storing, and Freezing

While this recipe is incredibly quick to prepare, here’s how to handle it for optimal enjoyment:

Storing Leftovers: Any leftover Honey Butter Skillet Corn should be stored in an airtight container in the refrigerator. It will stay fresh and delicious for about 5-6 days. Reheat gently on the stovetop or in the microwave.

Making Ahead: Due to its rapid preparation time (under 15 minutes!), making this dish entirely in advance isn’t typically necessary. The corn is best enjoyed fresh off the skillet when the sauce is at its creamiest. However, you can certainly measure out all your ingredients ahead of time to make the cooking process even quicker.

Freezing: I generally do not recommend freezing the prepared honey butter skillet corn. Dishes containing cream cheese or other dairy products tend to separate and become grainy once frozen and then thawed. This significantly affects the desired creamy consistency and overall texture of the sauce. Instead, if you want to prepare ahead, simply keep bags of frozen corn on hand to make a fresh batch whenever the craving strikes!

Serving Suggestions for Honey Butter Skillet Corn

This versatile side dish is a fantastic accompaniment to a wide variety of main courses. Its sweet and creamy profile complements both savory and spicy dishes beautifully. Here are some ideas for how to serve your delicious Honey Butter Skillet Corn:

  • Classic Pairings: It’s a perfect match for grilled meats like chicken, pork chops, or steak. The sweetness provides a lovely contrast to smoky or savory proteins.
  • Holiday Meals: Elevate your holiday spread by including this corn alongside roasted turkey, ham, or prime rib. Its vibrant color and comforting flavor are always a hit.
  • BBQ & Potlucks: This dish travels well and is always a crowd-pleaser at barbecues, picnics, and potluck dinners.

  • As a Topping: Spoon it over baked potatoes, sweet potatoes, or even use it as a flavorful base for a grain bowl with some added protein.

Recipe FAQs

Can I use canned corn for this recipe?

Yes, absolutely! Canned corn is a perfectly acceptable substitute for frozen or fresh corn in this recipe. Just be sure to drain it thoroughly before adding it to the skillet to prevent excess liquid from diluting the creamy sauce. You might also want to rinse it lightly to remove any residual canning liquid, then pat it dry for the best results.

Can I use reduced-fat or fat-free cream cheese?

Yes, you can use reduced-fat or fat-free cream cheese if you’re looking for a lighter option. While it will still work to create a sauce, please be aware that the consistency may not be as rich and creamy as with full-fat cream cheese. The overall flavor of the honey skillet corn might also be a bit different, as full-fat dairy contributes significantly to the dish’s depth and mouthfeel.

Can you freeze honey butter skillet corn?

I generally wouldn’t recommend freezing this specific recipe once it’s prepared, primarily because of the cream cheese content. Dairy products, especially cream cheese, tend to separate and become somewhat grainy or watery in texture after being frozen and then thawed. This will unfortunately affect the smooth and creamy consistency that makes this honey butter skillet corn so delicious. It’s best enjoyed fresh or stored in the fridge for a few days.
