  • 2 chicken breastsfresh or frozen
  • 1 small yellow oniondiced
  • 15 oz can black beansdrained and rinsed
  • 15 oz can Great Northern beansdrained and rinsed

  • 15 oz whole corncanned, undrained, or 2 cups frozen
  • 8 oz can diced green chiles undrained

  • 2 teaspoons cumin

  • 1 cup chicken brothor water, reduce to ½ cup for thicker chili
  • 1/2 cup cilantrochopped and packed, about 1/2 bunch
  • 8 oz cream cheesefull-fat or reduced-fat

Pour the chicken broth (or water) over everything. Add the chopped cilantro, then place the block of cream cheese directly on top of all the ingredients without stirring.
  • Cover the slow cooker and cook on the LOW setting for 6 hours, or on the HIGH setting for 4 hours. Once the cooking time is complete and the chicken is fully cooked and tender, carefully remove the chicken breasts to a cutting board. Shred the chicken using two forks, then return the shredded meat to the crockpot. Stir the cream cheese into the chili mixture until it has completely melted and is smoothly incorporated, creating a rich and creamy texture.
