  • 1 batch homemade fudgy browniesor brownie mix with ingredients used to make a 13″x9″ pans worth (Ghirardelli is my favorite brownie mix).

Buckeye Filling

  • 3 1/2 cups powdered sugar
  • 2 cups creamy peanut butter
  • 1 cup unsalted buttersoftened to room temperature
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 3/4 cups semi-sweet chocolate chips
  • 1 1/2 cups heavy cream

Brownies

  • Make the brownies according to package directions for a 9×13 pan, or make a batch of my homemade brownies. Ensure brownies are completely cooled before proceeding.

Buckeye Filling

  • In the bowl of an electric mixer with a paddle attachment, cream the softened butter and creamy peanut butter until smooth and well combined.
  • Gradually add the powdered sugar and vanilla extract. Beat until the mixture is light, fluffy, and completely smooth.
  • Spoon the peanut butter mixture evenly over the cooled brownies, smoothing it into a consistent layer. Set aside and proceed to make the ganache.

Chocolate Topping

  • Place the semi-sweet chocolate chips in a medium-sized heatproof bowl.
  • In a small saucepan, heat the heavy cream until it reaches a bare simmer (small bubbles around the edges). Do not boil. Remove from heat immediately and pour over the chocolate chips.
  • Let the mixture sit undisturbed for 3 minutes to allow the chocolate to melt. After 3 minutes, begin whisking gently, starting from the center and working your way outwards, until the ganache is completely smooth and glossy.
  • Allow the chocolate ganache to cool and thicken slightly for about 10 minutes before pouring.
  • Pour the cooled ganache over the peanut butter layer and spread it into an even top layer using an offset spatula.
  • Place the pan of brownies in the refrigerator to chill for at least 2-3 hours, or until the ganache is fully set. This makes for easier and cleaner slicing.
