Essential Ingredient Notes & Smart Substitutions

Success in any recipe often comes down to understanding your ingredients. For this irresistible Buffalo Chicken Dip, using the right components and knowing a few tricks can make all the difference. Here’s a closer look at the key ingredients and some helpful tips:

  • Chicken: The foundation of our dip! You’ll need 2 cups of cooked and shredded chicken. Chicken breasts are a lean and tender choice. I prefer to cook them in a skillet on the stove until the internal temperature reaches 160°F. For beautifully shredded chicken, transfer the cooked breasts to the bowl of a stand mixer fitted with the paddle attachment and mix on medium speed for just 20 seconds. This method is incredibly efficient and yields perfectly shredded chicken every time. Alternatively, for a super-fast shortcut, grab a store-bought rotisserie chicken and shred it – it’s a fantastic time-saver without sacrificing flavor.
  • Cream Cheese: An 8 oz block of full-fat cream cheese is essential for that signature creamy texture. It’s crucial that your cream cheese is softened to ensure it mixes smoothly without lumps. To speed up the softening process, unwrap the cream cheese, place it in a microwave-safe bowl, and heat it on half power for 20-30 seconds. It will be perfectly softened and ready to incorporate in less than a minute! Don’t skip this step, as cold cream cheese will make your dip chunky.
  • Buffalo Sauce: This is where the magic happens! Choose a high-quality buffalo sauce brand that you genuinely enjoy. My personal favorite is Frank’s RedHot Buffalo Sauce for its balanced heat and classic flavor. Remember, buffalo sauce is inherently spicy as it’s made with cayenne pepper hot sauce. If you prefer a milder dip, you can slightly reduce the amount of buffalo sauce or opt for a “mild” variety if available. For those who love extra heat, feel free to add a dash more or a pinch of cayenne pepper.
  • Ranch Dressing: Ranch dressing adds an indispensable layer of tangy flavor and an extra boost of creaminess to the dip. It beautifully complements the spice of the buffalo sauce, creating a well-rounded profile. While store-bought ranch works wonderfully for convenience, feel free to use a homemade recipe if you have a favorite. I love ranch dressing so much that I often scoop some warm buffalo dip onto my plate and drizzle additional ranch dressing over the top for an extra burst of flavor and moisture.
  • Cheese (Colby Jack or Sharp Cheddar): For the ultimate melty, gooey topping, I typically use Colby Jack cheese, which offers a great balance of flavor and excellent melting properties. However, sharp cheddar cheese is another fantastic option that provides a richer, more robust flavor and melts just as beautifully. You’ll use some of the cheese mixed into the dip and the rest for sprinkling on top to create a golden, bubbly crust.
  • Blue Cheese Crumbles: This ingredient is specifically for topping off the dish and delivering that iconic, pungent flavor that pairs so perfectly with buffalo sauce. The sharp, salty notes of blue cheese are a hallmark of classic buffalo flavors. However, if you’re not a fan of blue cheese, don’t worry! You can easily omit it entirely or substitute it with crumbled feta cheese or goat cheese for a different, but still delicious, salty and tangy element. Just remember the flavor profile will be different without the distinct taste of blue cheese.

Easy Step-by-Step Instructions for Your Perfect Buffalo Chicken Dip

Creating this crowd-pleasing Buffalo Chicken Dip is incredibly straightforward. Follow these simple steps for a warm, bubbly, and utterly delicious appetizer:

  1. Prepare Your Oven and Mix the Core Ingredients: Start by preheating your oven to 350°F (175°C). In a large mixing bowl, combine the cooked and shredded chicken, softened cream cheese, your chosen buffalo sauce, ranch dressing, and 1 cup of the Colby Jack (or sharp cheddar) cheese. Stir vigorously until all ingredients are thoroughly combined and the mixture is smooth and uniform. Ensure the cream cheese is fully incorporated to avoid any lumps.
  2. Transfer to a Baking Dish: Lightly grease a 9″x9″ inch baking pan or a 9-inch pie plate with cooking spray or a thin layer of butter to prevent sticking. Carefully spoon the buffalo chicken mixture into the prepared baking dish, spreading it out into an even layer with a spatula. This ensures even heating and a consistent texture throughout the dip.

  1. Top with Cheeses: Evenly sprinkle the remaining Colby Jack (or sharp cheddar) cheese over the top of the dip mixture. Then, scatter the blue cheese crumbles across the surface. This creates a beautiful, cheesy crust and adds a burst of tangy flavor.
  2. Bake Until Bubbly and Golden: Place the baking dish in your preheated oven and bake for 15-20 minutes. You’ll know it’s ready when the cheese on top is beautifully melted, golden brown, and bubbling around the edges. The dip inside should be thoroughly heated through and gloriously creamy.

  1. Serve Immediately: Once baked, remove the dip from the oven and let it cool for just a few minutes before serving. This allows it to set slightly and makes it easier to scoop. Serve this glorious dip warm with your favorite dippers, such as sturdy tortilla chips, crisp celery sticks, carrot sticks, sliced bell peppers, or various types of bread. Enjoy the deliciousness!

Expert Tips for the Best Buffalo Chicken Dip

To ensure your Buffalo Chicken Dip is always a showstopper, consider these expert tips and serving suggestions:

  • Perfect Dippers for Every Palate: The beauty of buffalo chicken dip lies in its versatility with dippers. My personal preference is sturdy tortilla chips, which offer a satisfying crunch and can handle a generous scoop. However, for a lighter, healthier option, crisp celery sticks and carrot sticks are fantastic. Bell pepper strips (red, yellow, or orange) also add a sweet crunch. If you’re a bread lover, consider slices of French bread, a crusty baguette, or even sourdough bread. Assorted crackers or pita bread wedges are also excellent choices. Offer a variety to please everyone!
  • Serve It Warm for Optimal Flavor: This buffalo chicken dip with blue cheese crumbles truly shines when served warm. The melted cheeses are gooey, the flavors are more pronounced, and the texture is incredibly inviting. If you’re hosting a game day party, potluck, or any gathering, try to time your baking so you can pull the dip out of the oven and start enjoying it within 10-15 minutes. This ensures maximum enjoyment and a perfectly molten consistency.
  • Effortless Reheating: Should you have any glorious leftovers (a rare occurrence with this dip!), reheating is simple. For oven reheating, place the dip in a preheated oven at 350°F (175°C) until the edges are bubbly and it’s heated through, typically 10-15 minutes. For an even quicker method, portion out the buffalo chicken dip into a microwave-safe bowl and microwave on high in 30-second intervals, stirring in between, until it’s thoroughly warm and creamy.
  • Make it in a Crockpot (Slow Cooker Method): This dip is wonderfully adaptable for a slow cooker, perfect for keeping it warm throughout a party. To make the buffalo dip in a crockpot, simply place all the dip ingredients (shredded chicken, cream cheese, buffalo sauce, ranch dressing, and 1 cup of cheese) into the slow cooker. Mix everything thoroughly to combine, then flatten the mixture into an even layer. Sprinkle the remaining cheese and the blue cheese crumbles over the top. Cover the slow cooker and cook on low heat for 3-4 hours, or until the dip is heated throughout and the cheese is melted and bubbly. Stir occasionally to ensure consistent melting, especially if not using a topping layer.
  • Blue Cheese Alternatives: While blue cheese is a classic pairing that provides a distinctive tangy and pungent flavor, it’s not for everyone. If you aren’t a fan, you can certainly omit it entirely. Alternatively, you can substitute it with crumbled goat cheese or feta cheese. Keep in mind that the flavor profile will differ significantly, as these cheeses have their own unique tang and saltiness, but they will still provide a delightful salty, crumbly element that complements the creamy dip.
  • Flavor Boosters and Garnishes: For an added burst of freshness, color, and texture, sprinkle freshly sliced green onions (scallions) or finely chopped chives on top of the dip just before serving. A drizzle of extra buffalo sauce or ranch dressing can also be a nice touch. For a little extra heat, a pinch of red pepper flakes mixed in with the main ingredients can kick things up a notch.

Make Ahead, Storing, and Freezing Your Buffalo Chicken Dip

Planning ahead can make party prep a breeze. Here’s how to manage your buffalo chicken dip for maximum convenience and enjoyment:

  • Make-Ahead Instructions: This dip is fantastic for preparing in advance! You can assemble the entire dip mixture up to one day before you plan to bake it. Simply combine all the ingredients as instructed (minus the blue cheese for topping, which is best added just before baking), spoon the mixture into your baking dish, and then cover it tightly with plastic wrap. Store the covered dip in the refrigerator. When you’re ready to serve, remove it from the fridge (and take off the plastic wrap), sprinkle with the blue cheese and remaining Colby Jack, and bake as directed. You may need to add a few extra minutes to the baking time since the dip will be chilled.
  • Storing Leftovers: Any leftover buffalo chicken dip should be stored in an airtight container in the refrigerator. It will stay fresh and delicious for 3-4 days. While it’s best served warm, it’s also surprisingly tasty cold or at room temperature the next day!
  • Freezing Recommendations: I generally do not recommend freezing this particular buffalo chicken dip recipe. The primary reason is the inclusion of ranch dressing, which is typically made with buttermilk. When buttermilk is frozen, it tends to separate and can become clumpy or grainy upon thawing, significantly impacting the texture and overall creaminess of the dip. The flavor can also be subtly affected. If you’re looking for a dip that freezes well, consider recipes without dairy products like buttermilk, or those using more stable cheeses that hold their texture better after freezing and thawing.

Frequently Asked Questions About Buffalo Chicken Dip

What can you eat with buffalo chicken dip?

Buffalo chicken dip is incredibly versatile when it comes to dippers! My absolute favorite is sturdy tortilla chips, as they provide a perfect crunch and hold up well to the rich dip. For healthier options, consider fresh vegetable sticks like celery, carrots, cucumber slices, or vibrant bell pepper strips. Other fantastic choices include various crackers, toasted bread such as French bread slices, baguette rounds, or even hearty sourdough bread. Pretzel crisps and pita bread wedges are also popular for their unique textures and flavors.

Is this buffalo chicken dip spicy?

Yes, buffalo sauce inherently brings a spicy kick since its main component is hot sauce, typically made with cayenne peppers. This buffalo chicken dip with cream cheese is definitely spicy, but the good news is that the cream cheese and ranch dressing work wonders to temper and balance that heat. They add a creamy, cooling element that prevents the spice level from being overwhelming, making it enjoyable for a wider audience than if you were just having straight hot sauce. It’s a flavorful warmth rather than an unbearable blaze!

Can you freeze buffalo chicken dip?

While it might be tempting to freeze leftovers, this particular buffalo chicken dip, made with ranch dressing, is generally not recommended for freezing. Ranch dressing contains buttermilk, and when buttermilk is frozen, its dairy components tend to separate and can become clumpy or grainy once thawed. This process significantly alters the smooth, creamy texture that makes the dip so delicious. Additionally, freezing can sometimes affect the overall flavor profile, making it less vibrant than when freshly made. It’s best to enjoy this dip fresh or refrigerated for a few days.

Ingredients

  • 2 cups cooked and shredded chicken
  • 8 oz cream cheesesoftened
  • 1 cup buffalo sauce
  • 1 cup ranch dressing
  • 1 3/4 cups Colby jack cheesedivided (can subsitute sharp cheddar cheese)
  • 1/3 cup blue cheese crumbles

Instructions

  • Preheat the oven to 350°F (175°C). In a large bowl mix the cooked chicken, softened cream cheese, buffalo sauce, ranch dressing, and 1 cup of cheese until well combined.
  • Spoon the mixture into a greased (with cooking spray) 9″x9″ inch baking pan, or a 9″inch pie plate, spreading evenly.
  • Sprinkle the remaining cheese and the blue cheese crumbles overtop. Bake for 15-20 minutes, or until the cheese is melty and bubbly around the edges. Remove from the oven and serve immediately with tortilla chips, celery sticks, bread, or your preferred dippers.

Notes

Slow Cooker Method: To make in a crockpot, simply place all the dip ingredients (shredded chicken, cream cheese, buffalo sauce, ranch dressing, and 1 cup of cheese) in the slow cooker. Mix to combine, then flatten into an even layer. Top with the blue cheese and remaining cheese. Cover and cook on low heat for 3-4 hours, or until heated throughout and bubbly.

Make Ahead: You can prepare the dip up to 1 day in advance. Assemble the recipe up until the baking step, then cover the dip with plastic wrap and store it in the fridge. When ready to bake, remove from the fridge (take off the plastic wrap), sprinkle with cheeses, and bake. Note: you may need to bake the dip a few minutes longer since it’s chilled.

Freezing: I do not recommend freezing this buffalo chicken dip because it contains ranch dressing. Ranch dressing is made with buttermilk, which, if frozen, will separate and become clumpy and grainy upon thawing.
